Baked eggplant for 4 persons

 

2 aubergines
Olive oil
Thyme, salt & pepper
Turkish yogurt
Garlic
1 Pomegranate

Cut the aubergines in half and make slots in all 4 halves. Rub olive oil on all cut surfaces so that the it becomes saturated. Sprinkle with a little salt, pepper and thyme. Bake in the oven at 175 degrees until the eggplant is golden. It takes about 20 minutes.

Mix Turkish yoghurt with a little salt flakes and grated garlic. Add this just before serving and garnish with a little pomegranate.
