Frittata med betsalladCOLOURFUL SALAD OF BEETS

During the winter there are many colors of beets: red, yellow and polka-colored!
Dressing:
1 shallot
6 tablespoons olive oil
2 tablespoons red wine vinegar
2 tsp thyme
1 kg of beet
coarse salt
Parsley for garnish
sea salt & black pepper
Chopping onion finely and mix with the other ingredients. Boil the beets with tops and husk until they feel soft. Slice the beets with a mandolin and pour over the dressing. Garnish with parsley. Let the beets stand for a while before serving.
